Milk fudge recipe

Easy milk fudge recipe 

  1. Sugar : 110 gm
  2. Water : 240ml
  3. Butter : 45 ml
  4. Milk powder : 165gm

 Water + sugar on medium heat


  Add butter

 Allow to cook until one string consistency 


 Once one string consistency is achieved immediately switch off the flame.

                                             Add milk powder mix nicely

                                    On low flame cook again for 2 to 5 mins

 Spread on Greased plate.

I have added some carob powder to make carob milk fudge. It came out nicely

Basic Eggless Sponge cake

Ingredients:
250 gm plain flour
2 tsp baking powder
1 tsp baking soda/ sodium bicarbonate
1 tin/400gm sweetened condensed milk
100 gm (1/2 cup) butter, melted
175 ml (scant 3/4 cup) water/milk
3 tbsp powdered sugar (optional)
2 tsp good quality vanilla extract
2 tbsp hot water

Process:
- Grease and line the bottom of an 8” square or 9” round cake tin with greaseproof paper/baking parchment/butter paper.

- In a mixing bowl, assemble the flour, baking powder and baking soda, mix with a spoon and sieve once to make the mixture uniform.

- Preheat the oven to 150 C.

- Put in the condensed milk, melted butter, vanilla extract and water into the mixing bowl containing the dry ingredients. Beat with an electric hand mixer, whisk or spoon or in a stand mixer until the mixture comes together and there are no lumps. This should take 3 to 4 minutes with an electric hand mixer/beater.

- Be careful not to over beat the mixture as this could result into a hard cake. Stir in 2 tbsp hot water and beat for a minute more.  

- Pour the batter into the cake tin and bake for 50 to 55 minutes or till done.

- The cake is done when a knife or cake tester comes out clean when inserted in the centre of the cake. Invert the cake on a cooling rack, cool and use as required.

Raw mango refreshing cold drink (aam panna recipe) (kachi Keri no Bafalo)

This Drink is very refreshing and cooling in hot summer. 
Its quick and easy to make.

aam panna recipe – Raw mango refreshing cold drink

prep time:  15 mins
cook time:  5 mins
total time:  20 mins



aam ka panna recipe - cooling mango drink slightly sour and sweet to taste 

ingredients :
  • 1 large or 2 medium sized raw mangoes
  • 2-3 cardamoms, crushed or powdered
  • 4-5 black pepper, crushed or powdered (optional)
  • 2 tsp black salt
  • powdered jaggery/sugar - double the amount of the mango pulp... add more for more sweetness


process :

  1. rinse the raw mangoes in water.
  2. steam the raw mangoes in pressure cooker for 3-4 whistles till they become completely soft and pulpy.
  3. remove the peel and take out the mango pulp.
  4. mix the cardamom powder, salt and jaggery to the mango pulp.
  5. mix the ingredients or blend to make it smooth.
  6. store aam ka panna in an air tight jar or bottle.
  7. while serving aam ka panna, add 1 tbsp of the preserve to one glass of water.
  8. stir and add ice cubes. serve aam ka panna cold.

Homemade Bread


1. 2 Cups Plain Flour (can be replaced with wheat flour as well)+ 2 tsp vegetarian yeast + 1 tbls oil + 1/2 tsp salt.



2. Mix well.

 3. Warm 1cup milk.


4. Knead the dough like roti. soft.


 5. Keep kneading the dough until it stops sticking to hands.


6. Apply little oil .


 7. Cover with plastic sheet or cloth and put in warm place to allow it to rise  at least for an hour.


8. Dough has raised nicely after 1 hour. size will be doubled. 


 9. Greece vessel with butter / oil.


 10. Take the dough and divide into 4 equal parts.


 11. Adjust in Greece vessel


12. Keep it there to rise again for 45 minutes.


 13. Bake for 20 mins @ 180 C.


14. Allow it to cool.


 15. Soft Bread are ready to serve.

Delicious and Quick Parwal (pointed gourd) Sabji

Wash and clean Parwal


Peel it and cut into half. Remove yellow seeds from Parwal. If seeds are tender then can be taken for filling.


Roast gram flour for 3 to 4 mins, Add red chili powder,turmeric powder,coriander powder,shredded dry coconut, sesame seeds, ground nuts powder , salt and Garam Masala. Roast for 2 more mins until nice aroma starts coming from mixture.Allow it to cool for few minutes.


Coat parwal with little oil and sprinkle gram flour mixture in it. Coat all parwal halves nicely.


Heat oil in heavy bottom pan. Once oil is heated add cumin seeds, ginger paste.Cook for 1 min.
Add coated parwal halves in oil. Cover the pan and cook for 10 minutes until parwal are tender. Give a stir each two mins.


Once parwal is tender, remove the cover and add little oil and cook for 2 to 3 mins for medium heat.



Delicious quick parwal sabji is ready to offer.
