Delicious and Quick Parwal (pointed gourd) Sabji

Wash and clean Parwal


Peel it and cut into half. Remove yellow seeds from Parwal. If seeds are tender then can be taken for filling.


Roast gram flour for 3 to 4 mins, Add red chili powder,turmeric powder,coriander powder,shredded dry coconut, sesame seeds, ground nuts powder , salt and Garam Masala. Roast for 2 more mins until nice aroma starts coming from mixture.Allow it to cool for few minutes.


Coat parwal with little oil and sprinkle gram flour mixture in it. Coat all parwal halves nicely.


Heat oil in heavy bottom pan. Once oil is heated add cumin seeds, ginger paste.Cook for 1 min.
Add coated parwal halves in oil. Cover the pan and cook for 10 minutes until parwal are tender. Give a stir each two mins.


Once parwal is tender, remove the cover and add little oil and cook for 2 to 3 mins for medium heat.



Delicious quick parwal sabji is ready to offer.

Arabi / Taro root / Baby Yaam Recipe Vegan

Boil Arabi 

Peel It.


 Cut it into peices


Jeera, Ginger paste, Chili paste, Hing, KAri patta 

Fry all in oil. 

Tomatoes --- Cut into pieces



 Add Tomato in pan after Jeera and parties are fried well..


Allow to cook untill oil gets separated from tomatoes.



Add Arabi and some  water as per need.



Allow to cook for 5 to 7 minutes.


Add Garam Masala.


Masala Arabi (Baby Yaam) / Taro Root Recipe

Oats Dates Halwa (Sweet)


This dish helps developing brain tissues. High in fiber and protein. Dates makes this dish rich in iron as well. No need to add artificial sweetener as nature sweetener dates is included. 











Preparation time:10 min 
Cooking Time :15 min
Serves : 2

2 tbs oat powder
3 piece of dates or 3 tsp Sugar

 1 cup milk
1 tbs ghee
1/4 tsp cardamom powder

1.Roast oats for 5 mins on medium flame on heavy bottom pan. Grind it finely.
2.While oat is getting roasted boil water. Add mashed dates in it.
3. Heat ghee in heavy bottom pan. Take small pan as quantity is less.
4. Once ghee is heated add cardamom powder in it followed by oat powder. cook for 2 mins stir it continuously.
5. Add milk and dates mixture in it. Stir it continuously and cook for 4 min till its thickened. 
6. Delicious halwa is ready. Garnish with dried fruits like cashew / pista/ Almonds. 


Tips:
1. Oats powder can be prepared in advance.
2. Dates can be replaced with honey.

Rajgira / Rajagara Roti / Ekadashi Roti




Ingredients

 2 cups Rajgira Flour (Can be found in indian grocery shops)
 1 tsp ginger chili paste
 1 tsp cumin powder
 3 tbs ghee
 Salt to taste.


1. Keep 2 tbs of Rajgira atta aside. This will require while rolling the rotis.
2. Making dough :  Take remaining Rajgira Atta in one medium size bowl, make well in between . Add 1 tbs ghee ,ginger chili paste , cumin powder and salt into the well. Mix all ingredients nicely.
3. Start adding the water as you knead the dough. The dough should not be so hard as well as so soft. This dough will be little harder then chapati dough. Keep the dough aside for 20 mins.




4. This dough would not be as elastic as roti's dough. Hence need to be more careful while rolling the rotis. Make small small lemon size balls from the dough.

5. Take one plastic sheet. Take 1 ball and roll into dry dough. Now put the coated ball on plastic sheet and roll it. If doing first time then do not roll big roti.
6. Heat the tava. I do not use nonstick tava. The one in pictures are iron tava.
   Once tava is heated, Gently pick the roti using both hands and place  to cook on the heated tava. Allow it to cook a couple of minutes on each side, by flipping it as it cooks. Apply ghee on both side.
7. Garma garam roti is ready to be offered to the lord.



Tips :
1. Roll first small roti as rajgira atta is not much elastic. You may also fry small puris instead of making rotis.
2. Add water as needed else dough may become soft and sticky.
